Stir Fry

This one is easy, quick to make, and healthy since stir frying method needs very less oil. For crisp and tender baby corn which has many nutrients and healthy soya nuggets which lowers bad cholesterol or LDL, you can go for this recipe.



Preparation Time: 15 minutes

Cooking Time: 10 minutes





Par-boiled baby corn cut into 1” pieces - 1 cup

Soya chunks (nuggets) - 1/2 cup

Chopped garlic - 2 tsp

Chopped spring onion whites - 1/4 dozen

Cubed capsicum - 1/2 cup

Sliced mushrooms - 3/4 cup

Soy sauce - 3 tsp

Tomato chilli sauce - 2 tbsp

Chopped spring onion greens - 1/2 cup

Oil - 1 tbsp

Pinch of sugar

Salt to taste





1.       Soak the soya nuggets in some warm water for about 10 to 15 min. Drain out the water and squeeze the excess water.


2.       Heat some oil in a non-stick pan and add spring onions, garlic and capsicum. Sauté over high flame till the onion turn golden brown.


3.       Now crush the mushrooms and sauté them for a minute.


4.       Add baby corn and soya nuggets and sauté them as well for few minutes.


5.       Now add tomato chilli sauce, soya sauce, salt and sugar to it. Cook for a couple of minutes.


6.       Add spring onion greens and cook for one more minute.


7.       Serve hot.
