Lemon rice is a classic dish and made not only during festivals like Pongal/Sankranti but also on a day to day basis. It’s a quite easy recipe and anyone can take it in lunch box as well. We love time saving recipes at the same time those taste yum. Lemon rice is such a dish which can be kept so simple and also can be made with many ingredients to make it special.

Serves: 2 people
Ingredients:
Medium grained cooked rice – 3 cups
Large lemon – 1
Mustard seeds – 1tsp
Split black lentils – 1tsp
Dried red chilies – 3 to 5 or as per taste
Bengal gram/Chana dal (Soak in water for 20 min) – 1tbsp
Dry roasted peanuts – ¼ to ½ cup
Turmeric powder – A pinch
Asafetida/Hing – ¼tsp
Springs of curry leaves – few
Sesame oil – 2 to 3 tsp
Salt – as per taste
Method:
1. Prepare some rice or use left over. Make sure the grains are separate. Spread the rice evenly and let cool. Add a pinch of turmeric and 1tsp of sesame oil to the rice and mix properly.
2. Take sesame oil in a pan and one the oil is hot add mustard seeds. When it starts popping, add lentils, chilies, hing and curry leaves to it.
3. Take some lemon juice and mix it well in the rice with a pinch of salt or as per taste.
4. Your delicious lemon rice is ready. Now take some rice in a plate and serve hot with a papad or roasted potatoes or pickle.
This is a very simple recipe and thus can be made in minutes if you have left over rice and the basic ingredients like lentils, mustard seeds, oil, salt and lemon. Next time you feel you don’t have enough time to make lunch box, try lemon rice.
