Brown rice risotto

 

 

A risotto isn’t a healthiest dish but if you can make few healthy changes in the making of it, then it can be a popular dish that could fit properly into your diet plan. So, here is the brown rice risotto recipe for you.

 

 

Ingredients:
 

1.       Cooked brown rice - 2 cups

2.       Finely chopped onions - 1/4 cup

3.       Finely chopped garlic - 2 tsp

4.       Finely chopped coloured capsicum (red , yellow and green) - 1/2 cup

5.       Cornflour - 2 tsp

6.       Low-fat milk , 99.7% fat-free - 1 cup

7.       Salt to taste

8.       Dry red chilli flakes - 1 1/2 tsp

9.       Dried oregano - 2 tsp

10.   Grated mozzrella cheese - 2 tsp

 

 

For The Garnish:


Finely chopped coloured capsicum (red, yellow and green)
 

 

Method
 

1.       Take some cornflour and dissolve it in 1 tbsp milk and keep it aside.

 

2.       Take a broad non-stick pan and heat it over medium flame and then add onions and garlic to it.

 

3.       Dry roast them for a couple of minutes over medium flame and sprinkle some water if the mixture starts burning.

 

4.       Now add capsicum and dry roast them over medium flame for a minute.

 

5.       Add brown rice mixing it well with the previous mixture and cook over medium flame for a couple of minutes while stirring occasionally.

 

6.       Add salt, oregano, chilli flakes, remaining milk and cornflour milk mixture, and cook over medium flame for 3 – 4 minutes and stir continuously.

 

7.       Add cheese and mix well. Cook over medium flame for about a minute and stir continuously.

 

8.       Garnish with colourful capsicum and serve.
