Sweet Corn Soup

 

Sweet corn soup is a healthy food and it’s a home remedy for cold and fever as well.

 

Ingredients:

 

Vegetable stock – 6 cups

Corn flour – 2 tbsp

Soy sauce – ¼ tsp

Salt and pepper – As per taste

Cream style sweet corn – ¼ cup

Finely chopped and lightly steamed carrots – ¼ cup

Finely chopped and lightly steamed beans – ¼ cup

Steamed sweet corn kernels – ¼ cup

Finely chopped spring onion leaves – 2 tbsp

 

Method:

 

1. Mix the corn flour in some vegetable stock. When it’s dissolved, add remaining stock in it along with soy sauce, salt and black pepper as per taste.

2. Take a heavy bottomed sauce pan, add the cream style sweet corn, corn flour stock mixture and stir well.

3. Turn on the stove and continuously stir allowing the mixture to boil till it begins to thicken. Now add all the remaining ingredients to it.

4. Let it boil for few minutes and then turn off the stove and adjust the seasoning. Serve hot.
