Who doesn’t like pav bhaji? It’s a delicious fast food which is mostly found in Maharashtra especially Mumbai and Pune. In Marathi Pav means bread and bhaji means curry and vegetable dish. We rarely find it in Andhra streets but we can definitely make this delicious dish at home. You can add any vegetables you love. It takes 20 min to prepare and 25 min to cook serving 4 people. So overall in 25 min you can have the delicious dish in your mouth.
Ingredients
Potatoes – 3
Carrots – 1 to 2
Green Peas – 1 cup
Ginger-garlic paste – ½ tbsp
Green Chilli – 2 to 3
Oil
Cumin Seeds/Jeera/Jeelakarra – 1 tsp
Large Onion, finely chopped - 1
Large Capsicum, finely chopped - 1
Medium Tomatoes, finely chopped - 2
Pav Bhaji Masala to taste
Chilli Powder
Salt to Taste
Coriander, for garnish

Directions
1. Boil carrots, green peas, and potatoes in a pressure cooker till they turn tender. Smash them.
2. Grind ginger, garlic, and green chilli to make paste.
3. Take a pan and heat some oil in it and add jeera. Add the paste to it and sauté. Add chopped onions and stir till they become light brown.
4. Add capsicum, stir and cover it till they are cooked. Keep checking frequently and stir. Now that they are cooked, add tomatoes and water.
5. Lower the flame till it becomes slightly thick. Add pav bhaji masala to it and chilli powder if required.
6. Add boiled vegetables and stir well. Simmer the flame for some time. Add some salt for taste and garnish it with fresh chopped coriander.
7. Slightly toast the pav or bread with some butter and serve it with the curry while it’s still hot.
