Pie

 

Ingredients:

 

9" Pie shell

 

Beaten egg with 1 tsp. water - 1

 

Pitted and sliced ripe nectarines – 6 to 7

 

Sugar – ¾ cup

 

Four – 2 tsp

 

Whole egg - 1

 

Egg yolk - 1

 

Heavy cream – ¾ cup

 

 

Method:

 

1.  Make pie pastry as per your taste and roll out to fit into a 9’ pie plate.

 

2. Line this pastry with parchment paper filling with pie weights.

 

3. Cover all the edges of the crust with aluminum foil and bake at 400 deg for about 10 minutes.

 

4. Now remove this from oven and remove weights but let the foil remain on the edges of the crust.

 

5. Return back to the oven now for 8 min and brush the baked crust with egg wash (egg beaten with some water).

 

6. Now toss in the nectarines with some sugar and flour. Spoon into the crust and beat the whole egg and egg yolk and whisk into cream.

 

7. Pour this mixture over the nectars in the pie crust.

 

8. Bake it in the oven at 425 deg for about 10 min. Reduce the temperature after that to 350 deg and bake again for 35 – 40 min till the pastry turns golden brown and the filling is firm.

 

9. Remove the pie from the oven and keep it aside to let it cool down.

 

10. Serve it when it comes to the room temperature and enjoy the taste.
