This recipe is a perfect snack who are much health conscious and don’t like to junk on foods like chips and chats. Have them as perfect evening snacks with family or at office.

Serves: 20 slices
Ingredients:
Thickly sliced unpeeled cucumber (approx. 20 slices) - 1 cup
Small red capsicum - 1
Oil for greasing - 1/4 tsp
Cooked chick peas - 1 cup
Crushed garlic - 2 tsp
Freshly ground black peppercorns to taste
Olive oil - 1 tbsp
Thyme - 1 tbsp
Lemon juice - 1 1/2 tsp
Salt to taste
Parsley to garnish - few sprigs
Method:
1. Apply some oil over red capsicum and pierce it with a fork and roast it over open medium flame till it turns black in colour in all the sides.
2. Now immerse it in water and remove the skin, seeds and stem and cut into thin strips. Keep it aside for garnishing purpose.
3. Combine chick peas, garlic, black peppercorns, olive oil, thyme, lemon juice, salt and parsley. Blend it well into a smooth mixture with some water.
4. Take the cucumber slices in a plate and top them with this mixture.
5. Garnish each of them with red capsicum strips and parsley springs.
6. Serve and enjoy the snack.
