Vegetable kebabas

 

 

Here is a colourful and delicious dish that is a sure shot hit at any kind of party. The uniqueness of this dish is the marinade. You can choose any vegetable you like and these can be prepared without using oil and so this makes the kebabs healthy and is low in calories.

 

 

Preparation Time: 15 minutes 
 

Cooking Time: 10 minutes 

 

 

Ingredients:

 

1.       Blanched baby corn cut into 1/2" pieces - 1/2 cup

2.       Cubed capsicum - 1/2 cup

3.       Deseeded and cubed tomatoes - 1/2 cup

4.       Cubed low fat paneer or cottage cheese - 1/2 cup

5.       Cubed onion - 1/2 cup

 

 

Ingredients for marinade:

 

1.       Whisked low fat curds - 3/4 cup

2.       Chilli powder - 1 tsp

3.       Turmeric powder - 1/4 tsp

4.       Ginger paste - 1/2 tsp

5.       Garlic paste - 1 tsp

6.       Bengal gram flour - 1/2 tsp

7.       Roasted and crushed dried fenugreek leaves - 1/2 tsp

8.       Roasted and crushed carom seeds - 1/4 tsp

9.       Salt as per taste

 

 

Method:

 

1.       Mix curds, chilli powder, turmeric powder, turmeric powder, ginger and garlic paste, Bengal gram flour, fenugreek leaves, carom seeds in a bowl which is called marinade.

 

2.       Mix capsicum, baby corn, tomatoes, onions, paneer and marinade in a large bowl.

 

3.       Combine the baby corn, capsicum, tomatoes, paneer, onions and the prepared marinade in a large bowl and mix well. 

 

4.       Now refrigerate this mixture for about 30 min to marinate.

 

5.       Take a non-stick pan and heat it over medium flame. Now dry roast marinated vegetables in the pan for 10 min or till they turn golden brown.

 

6.       Take out the vegetables from the pan and pierce a piece of baby corn, tomato, capsicum, onion and paneer one by one using a toothpick or skewer.

 

7.       Do the same with the remaining vegetables as well.

 

8.       Serve hot and enjoy the kebabs with your family and friends.
