Gazpacho Salad

 

 

Gazpacho salad is inspired by famous Spanish cold soup. This salad is a great pasta salad suitable for summer picnics and easy dinners. This one is so colorful, delicious. The tanginess is due to lime-tomato dressing and green chili. The below recipe takes 20 minutes for preparation and 10 minutes to cook serving 6 people. Overall this will take 30 minutes of your time.

 

 

Ingredients

 

 

1.     Fusilli pasta – 225g

2.     Chopped green onions – 4

3.     Chopped green capsicum – 1

4.     Seeded and minced green chilli – 1

5.     Chopped tomatoes – 2

6.     Cucumber – 1

7.     Olive oil – 4 tbsp

8.     Salt – ¼ tsp

9.     Crushed clove garlic – 1

10.   Fresh lime juice – 4

11.   Freshly ground black pepper – ¼ tsp

12.   Tomato juice – 175ml

 

 

Directions

 

 

1. Cook fusilli pasta as per the instruction printed on the package.

 

2. Take a large bowl and mix pasta, green capsicum, chopped onion, chili, cucumber slices, tomato slices, salt, oil, black pepper, lime juice, and tomato juice.

 

3. Toss all the ingredients well and let it chill in refrigerator for about 2 hours.

 

4. Toss once again and then serve. Enjoy the yummy Gazpacho salad.
