Fresh Corn Salad goes well with any season. Try this delicious salad at anytime. Frozen corn, not cooked, and thawed can give delicious taste to this dish and garnishing with garlic vinegar can be yummier. This salad is full of fresh vegetables and basil and with feta cheese, it becomes rich and tangy.

 

Corn Salad

 

Ingredients:

Olive oil – 5 tsp

Lime juice – 1 tbsp

Salt – ¼ tsp

Hot pepper sauce – ¼ tsp

Thawed fresh or frozen corn – 1 ½ cups

Halved Cherry tomatoes – 1 ½ cups

Finely chopped cucumber – ½ cup

Finely chopped red onion – ¼ cup Minced fresh basil or dried basil – 2 tbsp

Crumbled feta cheese – ¼ cup

 


Directions:

1. Take a small bowl and whisk 4 tsp of oil, lime juice, pepper sauce and salt. Set it aside.

2. Take a large skillet, cook and stir corn in the remaining oil over medium heat till it’s tender.

3. Take a salad bowl and transfer the corn to it and let it cool slightly. Now add tomatoes, onion, cucumber, and basil.

4. Leave it for some time to settle down or refrigerate until chilled. Sprinkle some cheese before serving.
