Here is yet another fruit pie, blueberry pie which is one of the most delicious fruit pies.

 

Blueberry Pie

 

Ingredients:

 

1. Blueberries – 2 pints (4 cups)

 

2. Sugar – ¾ cup sugar

 

3. Cornstarch – 3 tbsp

 

4. Water – 3 tbsp

 

5. Grated lemon rind – 1 tbsp

 

6. Cinnamon – ½ tsp

 

7. Nutmeg – ¼ tsp

 

8. Unsalted butter – 2 tbsp

 

9. Well beaten egg - 1

 

10. Salt, for egg washing top of pie – 1 tsp

 

11. Sugar, for top of pie – 2 tbsp

 

12. Individual pie crusts - 2

 

 

Directions:

 

1. Mix 1 cup berries and ¾ cup sugar in pan.

 

2. Melt sugar on low heat and when melted and its liquid, turn it off.

 

3. Mix cornstarch and water in bowl.

 

4. Add this mixture to the pan with blueberries.

 

5. Cook this over medium heat till the mixture comes to boil and is thick and clear.

 

6. Take this hot mixture into a large bowl and cool until warm.

 

7. Fold in the remaining 3 cups of blueberries, lemon rind, cinnamon, nutmeg and butter into it properly.

 

8. Let this mixture cool and then add it to the pie crust.

 

9. Add top crust followed by brushing it with egg wash. Now sprinkle some sugar over it.

 

10. Preheat oven to 400°F and then reduce heat to 375°F just before putting the pie in the oven. Bake it around 40 minutes.

 

11. Check the pie halfway while baking. Cover the edges well with a strip of foil if its edges are getting too brown. This technique works for any delicate fruit such as raspberries or strawberries.

 

12. Now serve and enjoy it.
