Baked Ham Risotto can be a last minute recipe but this requires lots of attention and maybe that’s why it’s not suitable for company.  It can stand up to an hour but after that it comes out of the oven, well covered and can still be delicious.

 

Risotto

 

Ingredients:

 

Olive Oil – 2 tbsp

Finely chopped onion – 1

Minced garlic cloves – 3

Arborio or long grain white rice – 2 cups

Chicken broth – 6 cups

Dried basil leaves – 1 tsp

Salt – ½ tsp

Pepper – 1/8 tsp

Grated Parmesan Cheese – 1 cup

Butter – 2 tbsp

 

Method:

 

1. Preheat the oven to 400 degrees F.

 

2. Take a heavy oven-proof saucepan with tight fitting lid. Heat some olive oil in it over medium heat.

 

3. Cook onion and garlic stirring for 4-5 minutes until translucent.

 

4. Now add rice and cook by stirring for 4-5 minutes.

 

5. Add broth, pepper, and basil and simmer the heat. Stir frequently.

 

6. Cover it with a foil and then with a lid. Place it in the oven now and bake for 20 minutes.

 

7. Now remove it from the oven and stir thoroughly. Cover it with the foil and the lid again and bake again.

 

8. Add broth, basil, salt, and pepper and bring to a simmer, stirring frequently but this time for 5 minutes longer.

 

9. If the rice is done, add cheese and butter and stir properly. Let it stand for 5 minutes covered.

                            

10. But if your rice isn’t done yet, then bake for 10 more minutes.
